This course is designed to teach the theory, preparation, and history behind Viennoiserie/enriched breads. Learn about ingredient function, mixing methods, and baker’s percentages. With hands on experience students will also learn about dough lamination, fermentation, and handling of enriched bread dough. Recipes include croissants, cinnamon rolls, and babka.
