The theory, technique, and evaluation of Artisan/Hearth style breads. Through hands on experience learn to mix, shape, score, and bake bread. Scientific theory behind mixing, fermentation, and ingredient purposes will be explained. Recipes to be prepared include baguettes, white bread, and whole wheat sourdough.
